BAM 2: Eringi miso soup, Nikujyaga, Fuki Ribbon Okazu and Rice

This is the Second Build-a-Meal. BAM 2 will be comprised of: Eringi miso soup, Nikujyaga (Japanese meat and potatoes), Fuki Ribbon Okazu (side dish) and Rice.

Build a Meal 2: Rice, Eringi miso soup, nikujyaga and fuki ribbon okazu

I'm going to start with the second miso soup recipe.

Eringi (King oyster mushroom) & Green Onion Miso Soup (2 Servings)

Ingredients (Servings 2)
1 medium sized eringi mushroom sliced length wise and then cut in half.
1 green onion
2 Tablespoons +1 teaspoon of miso
2 cups nibandashi*

Directions
1) Make nibandashi or you can use ichibandashi. As a substitute you can use 3 cups of water and 1/4 teaspoon of dashi powder.
2) Add enringi and bring to a simmer. Enringi cook fast so you only need to simmer for about 1-2 minutes.
3) Add the miso and put the miso in a ladle and use chop sticks or something to dissolve the miso before adding it directly to the soup.
4) Add the green onions and serve immediately.

Add the miso just before adding the green onions.
