Ingredient in the Spotlight: Kyuri (Japanese cucumber)

Japanese cucumbers are a different variety than English (hothouse) cucumbers. They are long and slender with a thinner skin and have less seeds. I like that you don't have to peel or seed them. They are also crunchier than other varieties.

Sometimes I peel off half of the skin to create decorative stripes but it's thin enough to eat as is.

I enjoyed this kyuri right off the vine at my parents house last summer.

If you're lucky enough to get fresh off the vine kyuri, eat it with a little moromi (fermented substance that develops during the fermentation process when making soy sauce or sake) and have yourself a morokyu (Fresh kyuri with moromi). If you don't have moromi, because let's face it where do you even get that stuff, then use a nice koji miso or your favorite miso.
